~ Auntie Cath’s Peanut Butter Chicken ~

A staple from my childhood. Written by my mom, Karla Svoboda.

My mom’s favorite past time is cooking with people she loves. The origin of this particular recipe is from one of my Auntie’s. She was our next door neighbor when I was a baby but has since moved home to Australia. '

We ate a version of this recipe almost every week growing up. I made it for the first time myself, just last month. I hope you enjoy it too !

*All measurements are to taste. I don’t normally measure as I cook, but dump and scoop and taste. Start with these amounts and add more as you like.

2 c. chicken, diced– or tofu or your choice of vegan chick’n options

4 cloves garlic, chopped

½ c. chopped onion

Coat the chicken cubes with seasoning:

1 t. ground ginger

1 t. garlic powder

½ t. each: ground coriander, turmeric powder, and cumin

salt and pepper

Cook the chicken, onion, and garlic in 2 T. oil till chicken is browned.


Add your seasonings to the chicken. For the seasoning, I generally open my spice cupboard and start picking and choosing what suits my fancy for the day. Taste & add more or move on down the list:

1-2 finely chopped Serrano chilis - or 2 t. paprika and ¼ t. cayenne, or some Asian chili sauce

1 t. cumin

1 t. coriander

1 t. turmeric

1 t. nutmeg

1 T. fresh grated ginger root (or 1 t. dried powdered ginger)

1-2 T. curry – there are so many varieties! You can use Thai red or massaman paste or your favorite ground curry powder. 

This is a good time to add any vegetables you might want:

chopped red bell pepper

broccoli florets

shredded carrots

sliced zucchini or yellow squash

water chestnuts

green beans

Stir, heating spices and veggies before adding: 

2 c. chicken or veg stock – or bouillon + water

zest of 1 lime

juice of 1 lime

1-2 T. soy sauce - or tamari sauce (gluten free) or liquid aminos or fish sauce

1-2 T. brown sugar

1 T. vinegar 

Simmer til chicken is fully cooked, then add:

1 can coconut milk

3/4 - 1 c. natural peanut butter– I usually have salted crunchy on hand

Taste and add any other seasonings, especially salt and pepper, and simmer 3-5 minutes til heated through.

Serve over rice or noodles.

2 c. stock

zest of 1 lime

juice of 1 lime

1-2 T. soy sauce

1-2 T. brown sugar

1 T. vinegar 

1 can coconut milk

3/4 - 1 c. peanut butter

Cooked Rice or Noodles
